Thai kale with sweet cashew chilli dressing


I made this the other day while struggling with no fridge in our new house and an abundance of kale to use up before it went off.

I adore kale, can’t get enough – but I always serve it with savoury flaovurs like tamari, lemon, salt or nutritional yeast.

And then something sweet and creamy floated into my consciousness and a thai cashew dressing I had seen in Everyday Raw Express and been longing to try finally got made. It was a match made in heaven, an unsuspecting Instagram hit, and so here it is. Enough said.

Serves 1

2 big handfuls of kale

1/4 cup cashews

5 tbsp toasted sesame oil

2 tbsp maple syrup or honey

5 tbsp tamari

5 tbsp fresh lime juice

4 tbsp rapeseed oil

1 tsp chilli flakes (optional)

Sea salt and pepper to season

Steam your kale, blend your dressing (there will be lots so you can keep the rest in the fridge), toss some in, garnish and go!
