This is the happiest most soulful little creation. I found the recipe scribbled on a notepad from years ago at a friend’s house and was so intrigued. It is a delicious mix between a light fluffy mousse and a thick and creamy nut butter, and the simple flavours of fresh orange and vanilla work perfectly together and happily straddle winter, summer and everything in between.
Brazil nuts are a dense source of essential mineral potassium, and a rich source of good fats too, but it is important to always buy organic and raw if you can.
1 cup brazil nuts
6 deglet noir dates
juice of 1 orange
one vanilla pod
¼ cup water
Blend until soft and smooth and serve in pots or with fresh fruit.
