Continuing the green theme… Sweltering through the heat in London last week, I was berating myself for not having filled up the fridge with anything smoothie-appropriate. Too hot and tired to think strategically about food, I just wanted to whizz up something easy and refreshing.
Then I spied a leftover cucumber from our veg box, and found the last remaining ripe and juicy melon in our local shop. Add some young mint from the garden and I built myself a glass full of green, summery goodness.
Sometimes these things are so simple you almost look past them for something more complicated.
A lesson to remember.

1/2 ripe melon
A handful of mint
